Decoration of cutlery. General table setting rules: cutlery and crockery. How to properly place cutlery on the table. The order of unfolding cutlery

In this article, you will learn about what types of cutlery exist, their advantages and disadvantages, the pros and cons of the material from which they are composed. Also, we will talk about the care of cutlery, and how to properly lay out cutlery and much more.

There is a wide variety of cutlery, which consist of various materials, they can be: wood, aluminum, stainless steel, plastic, cupronickel or silver.

Cutlery serves to handle dishes, food at the table. Often the usual, standard cutlery that you see in the picture: a spoon, a fork and a knife - they are used for first and second courses, as well as for the process of laying out dishes if there are no serving utensils.

In addition, there are specialized cutlery for different dishes - appetizers, fish, dessert, fruits, etc.

Dessert types of cutlery

The dessert device includes a spoon, a fork and a knife of small sizes. Often dessert devices have an original, unusual design that emphasizes their elegance. A dessert fork is needed for sweet dishes, pies, charlottes, etc. A dessert spoon is used to eat dishes with a loose consistency - mousses, puddings, fruits in syrup, etc.

For fresh fruits - pineapples, apples, pears, watermelons, melons - a fruit device is used, including a fork and knife. Canned fruits can be eaten with one fork.

For serving coffee and tea, special devices are also used - coffee and tea spoons, and for ice cream - flat blades with curved edges.

Serving utensils (accessories) are sometimes referred to as cutlery, although this is not entirely correct - since they eat with cutlery, and serving utensils are used to put dishes on plates, cut and divide them into portions and perform other maintenance operations. Cutlery is also often called individual, and serving - auxiliary.

Cutlery for a traditional breakfast with coffee or tea, various types of bread, butter, marmalade and honey (but no egg)

Cutlery for a "coffee mug" or tea party with pastries. You can add a paring knife if needed.

Cutlery materials

Wooden cutlery

Wooden spoons can be used for trips to nature, but not for daily use. The tree absorbs moisture, it is short-lived, and eating with such spoons is inconvenient.

Aluminum cutlery

Aluminum cutlery was common before. Now there are disputes about the dangers of aluminum, but in any case, aluminum cutlery quickly loses its shape, color, and is also fragile.

Stainless steel cutlery

Stainless steel cutlery is one of the most popular. They are made from medical stainless steel, which practically does not react chemically with alkalis, salts, acids. The most commonly used stainless steel is "18/10", which contains 18% chromium (gives strength and stainless properties) and 10% nickel (gives shine and protects against aggressive food acids).

Cupronickel cutlery

Melchior is an alloy of copper, nickel and manganese. Cupronickel cutlery ceased to be produced in the 50s of the last century. Nickel silver cutlery is now being produced (it is softer, it also contains zinc). Nickel silver cutlery is plated with silver, gold or blackened. On the reverse side of such devices there is an MNC marking.

Silver cutlery

Silver cutlery is very expensive and is the pride of the owners. The devices themselves are quite heavy, so it cannot be said that they are convenient for daily use.

How to choose cutlery?

Most often, dinnerware sets consist of 24 items: 6 soup and small spoons, forks and knives. But there are sets for 12 people. Such sets may also include a sauce spoon, dessert, salad forks, a ladle, a cake spatula, a sugar spoon, sugar tongs, a fork for fish and meat.

When buying cutlery, you must definitely pay attention to the shine - it can be white or grayish. Make sure that there are no burrs on the edge of the appliances. Fork teeth must not be excessively sharp, dull or chipped.

A high-quality spoon or fork should not be deformed by the fact that you press harder on the bend - it should be thickened. There should not be any smell from the devices.

The standard thickness of cutlery is 1.5-4 mm, and the depth of spoons is 7-10 mm.

Knife blades can be non-hardened (they are cheaper, but over time spots appear on the blade, they wear out and age) and hardened (such a blade is elastic).

Ask the seller for a hygienic conclusion and a certificate of conformity. The certificate must indicate: the manufacturer, the address of the manufacturer, the name of the cutlery brand. The same data should be on the instrument box.

Cutlery care

Stainless steel cutlery should be washed immediately after use to prevent food residues from drying on them. You can wash them with dishwashing detergent with a sponge or cloth. Stainless steel cutlery can also be washed in the dishwasher. If dark or iridescent spots appear on the appliances, they can be easily removed with a solution of citric acid or vinegar.

If you have cutlery with plastic handles, then you will need to constantly clean the dirt from the places where metal and plastic come into contact. Such devices can also be washed in the dishwasher, but do not use high-temperature conditions.

Caring for cutlery made of silver, cupronickel or nickel silver is a little more difficult. After each use and washing, such devices should be rinsed in a solution of baking soda (50 g of soda per 1 liter of water). They can only be cleaned with special pastes and napkins. You can also clean it with ammonia: for this you need to take 10% ammonia, pour it into a container and put cutlery there for 15 minutes. After that, rinse them in running water and wipe dry.

Lunches, friendly dinners and just tea parties with friends - so you want to do everything right and beautiful, so that everyone is comfortable, so that
the time spent was truly enjoyable for everyone. But surprising guests with culinary talent or entertaining with an interesting conversation is far from everything.
No matter how tasty and original the treats are, it is important to serve them correctly, to present them in accordance with the rules and etiquette. Perhaps for some it seems like an unimportant "tribute to tradition", but think about it, this "science" of table setting is more than one hundred years old.

The art of table setting has been formed for thousands of years, improving with each new generation. It represents a multifaceted and interesting feast culture. Just think how many peoples and nationalities are on our Earth! Each and every one of them has not only their own cuisine and their own way of life, but also their own principles of serving dishes and table setting rules. This science can be studied endlessly, without ceasing to be surprised and look for something new.

Of course, today we will not be able to cover the entire scope of existing traditions and features, but it is quite possible to “slightly open the door” to this interesting World and give several answers to the question of how to lay the table. I offer you a few rules of the generally accepted, "European" table setting, used in many countries, including Russia.

Simple secrets of table setting, which we sometimes tend to forget

Firstly, I want to clarify right away that the decision on how to set the table is made by each hostess independently. There are many options that meet the basic rules. The main thing to remember is that this "art" is more dependent on the taste and wishes of the person setting the table. It doesn't have to be about financial possibilities. Believe me, a simple tablecloth with paper napkins can look very beautiful and sophisticated.

When setting the table, try to take into account the number and type of dishes, take care of the availability of the necessary utensils, cutlery and other items in advance. For example, if there are dishes on the menu that you need to eat with your hands, stock up on enough napkins or prepare a bowl for washing your hands.

When setting the table, be guided by the circle of guests (close friends, colleagues, relatives with children, etc.). It is necessary to provide comfortable conditions for each of the guests. If you plan to have small children at the table, most likely you will need to replace the fork and knife with a tablespoon or dessert spoon.

It is important that the table setting matches the type and occasion of the feast.
If it's a business or formal dinner (such as an introduction dinner), it's best to stick to a more subdued, neutral style. If only friends and close people are among those invited, the serving may be more free, using additional table decorations and other things.
It is also important to remember that all elements of the table setting should be combined not only with each other, but also organically fit into the overall interior of the room. Classics are transparent glass goblets and white plates, which are universal for almost any table, if there are none, then try to choose the most suitable service from the available ones.

The main “favorites” of table setting, as already partially mentioned earlier, are: tablecloth, napkins, crockery, cutlery and various decoration items. In order to correctly and quickly arrange the numerous items involved in setting the table, a certain sequence of actions is provided, guided by it, we will try to set the table.

Answering the question "how
set the table", it would be appropriate to say about the tablecloth

Naturally, before setting the festive table with dishes and cutlery, it must be covered with a tablecloth. Today in stores you can find plastic and oilcloth tablecloths of different colors and patterns. They are certainly beautiful, but more suitable for everyday use.

A linen (fabric) tablecloth is considered truly festive and “homemade”. It can be colored, plain or with a pattern around the edges. Her choice depends on the type of feast, the color of the dishes used, the general interior of the room. Ideally, it should go well with curtains and furniture upholstery (if there is one in the room).

The best option is a tablecloth with a plain, preferably light, central part. Bright and colorful canvases can not only distract from dishes, but also quickly tire due to the saturation of colors and the contrast of the pattern. If you decide to use a dark-colored tablecloth, try to match it with light-colored dishes, this will make the appearance of the table more harmonious and pleasant.

And, the main thing. Whatever tablecloth is preferred, it must be spotlessly clean and well ironed. If you are afraid for its quality and appearance, in some cases the tablecloth can be covered with a thin transparent oilcloth or a beautiful matching napkin unfolded under each plate.

Crockery and cutlery

After setting the table with a tablecloth, arrange plates, glasses and cutlery. At the same time, it is recommended not only to wash and wipe them thoroughly, but also, if possible, polish them to a shine. Multi-layer paper napkins or stiff cotton towels that do not leave lint work well for this.

On the eve of the feast, do not be too lazy to clean the cutlery, they should not have streaks and water stains. Moreover, this is not acceptable in the case of glassware for drinking: wine glasses, glasses, glasses and glasses must be perfectly transparent, which is easy to check by light.
After bringing the serving items to the required state, we begin to arrange them:

    1. a snack plate (medium-sized plate) is located at a distance of about 2 cm from the edge of the table strictly opposite each chair;
    2. to the left of the snack plate (at a distance of 5-15 cm) a bread plate (pie) is placed. However, in a home, even a festive, feast, it is rarely used;
    3. in case several dishes are provided, a small dining room is placed under the snack plate.

During the meal, a timely change of plates is provided, in accordance with the dishes served.

Next, we move on to cutlery. The knife and tablespoon are always placed on the right side, the fork on the left. The dessert spoon is placed behind the plate, with the handle to the right. At the same time, it must be taken into account that, according to the rules, a person begins to use the devices lying at the outer edge, then, as the dishes change, he takes the devices towards the plate. The distance between adjacent appliances, as well as between appliances and a plate, should be 0.5 - 1 cm.

Wine glasses, glasses, glasses, etc., are also calculated for only one type of drink. The wine glass is placed on the right, the water glass on the left. More often they are displayed in one line, but it is not customary to display more than three items in a row. When the table is fully set, items for drinks are placed in two rows.

Napkins

About how to set the table with napkins, or rather how to serve napkins - a special conversation. Someday it is necessary to devote a separate article to him, to talk about

addition options and the possibilities of decorating the table with them. Now let's talk about some basic rules.

This important serving attribute is used at all feasts without exception. For important festive celebrations, linen (linen, cotton) napkins are more often used, sometimes they can be replaced with paper ones. A folded napkin is placed on each guest's snack plate. If paper napkins are used, they can be placed under the right edge of the plate.

Arrangement of devices with spices

Appliances with spices are placed at the end of the serving. They are installed in the middle of the table on special stands. Salt and pepper must be required; mustard, table vinegar, vegetable and other seasonings - as needed (in accordance with the menu).

How to lay a festive table and
everyday with jewelry

The main decoration of any table is, of course, flowers. They are pleasing to the eye and pleasant to almost everyone. But, at the same time, using them for serving, try to take into account a few nuances:

    1. Most importantly, make sure that none of the invited guests are allergic to this type of plant.
    2. Do not use flowers with a strong smell for a table bouquet. Mixed with the aroma of dishes, it can become cloying and produce an undesirable effect.
    3. Place the vase at an appropriate distance from dishes and cutlery so that pollen or accidentally fallen petals cannot get into the food.

In addition to flowers, figurines, various figurines and souvenirs are also used to decorate the table. So, if any holiday or family celebration served as a reason for the feast, you can use the appropriate paraphernalia to decorate the table.

For example, for Christmas or New Year, make a beautiful composition of candles, tinsel, Christmas decorations or souvenirs (observing safety measures when lighting candles); for a wedding celebration, use small figurines of doves, figurines of the bride and groom, flowers; when preparing a youth or children's birthday - focus on bright colors, for children - pick up images of your favorite characters; when decorating a table for colleagues for a professional holiday, a good solution would be to use small items associated with professional activities, etc. The main thing, remember, in everything a reasonable measure is important.

And yet, whatever decoration you choose, be it a flower bouquet or a figurine, it should be such a height that all guests can freely see each other.

A few words about etiquette
Try to create comfortable conditions for each of the invitees. Remember that the hostess can offer guests certain places, or let them choose their own.
A sign of the end of the feast can be a used linen napkin left by the hostess on the table. Otherwise, even when temporarily leaving the table, both guests and hosts in no case put a napkin on the table (only on a chair).
When inviting guests, the hostess should make sure that the menu contains dishes for all guests. If for some reason the guest does not eat any food, it is important to notice this in time and, without focusing attention, offer him an appropriate replacement.

Enjoy your feasts and happy holidays with your family, friends and loved ones!

A holiday is a good mood, meeting with friends and family, fun and, of course, a festive table with mouth-watering and delicious dishes. Housewives try to cook exquisite and varied delicacies to please their household and guests. For the festive table, along with the taste of cooked dishes, the correct and beautiful table setting and table decoration are of great importance. Beautifully presented dishes and the use of various decorative attributes can make even an ordinary dinner unforgettable. And for a celebration, table setting is of great importance and can turn a feast into an aesthetic pleasure and create a special feeling of a holiday.

Table setting is the correct competent arrangement of appliances and dishes and decorative design, thanks to which you can create a homely cozy atmosphere or a pompous and elegant atmosphere corresponding to the celebration. The general decoration of the table should be decorated in a common unified style, not overloaded with unnecessary dining and decorative elements, and should correspond to the theme of the holiday.

For various celebrations, special decor elements are used, indicating compliance with a particular holiday. All these elements are additional decoration that decorates the table and creates a general mood. But there are basic components without which serving a festive table is impossible: cutlery, porcelain and glassware, textiles and paper products. These components should be correctly and conveniently placed on the table, creating a single harmonious style.

The basic rules for serving a festive table have been formed over many years and are currently the art of decorating a celebration. The selection of all components must be approached comprehensively and carefully, not being afraid to experiment and innovate. The hosts themselves decide how to lay the table so that it has not only an aesthetically attractive appearance, but is convenient for all guests seated at it.

Selection and placement of serving elements

Proper serving of the festive table implies the presence of all the necessary appliances, individually for each guest, so that he can accommodate and eat comfortably, with enough space for personal space. The main elements of serving are a tablecloth, napkins, plates, glasses and glasses, cutlery: forks, spoons and knives for various purposes.

Tablecloth selection

The color, size and shape of the tablecloth are of great importance. Since it takes up as much space as possible on the table and is the background of the overall decoration. The dimensions and shape should correspond to the parameters of the table, the optimal length of freely hanging edges is no more than 30 cm. The color of the tablecloth should be in harmony with the dishes and correspond to the solemnity of the event. A white, light or pastel tablecloth will make the festive table especially solemn and elegant. This tablecloth is suitable for any color tableware. White plates will accentuate an elegant setting, and any bright colors will stand out in contrast against a light background.

The intense colors of the tablecloth are more suitable for cozy feasts, creating a warm family atmosphere. A holiday for children should be bright and fabulous, so the tablecloth is chosen with a colorful rich pattern. To decorate and create an unusual color effect, you can use a runner or naperon, the look of a two-layer tablecloth makes the table design elegant and solemn. In the photo, table setting using naperon:

Plates and cutlery

The number of plates and utensils used depends on the planned meal changes. Competent serving involves arranging dishes in a sequence that is convenient for use in the phased serving of dishes. On the lower serving plate, place the plate for the main course, the next diner and the top one, if necessary, the soup one. A small pie plate, for bread, is set to the left, slightly higher from the main plates.
Cutlery is laid out on different sides of the plate. To the right is a place for spoons and knives, to the left - for forks. The sequence of cutlery corresponds to the serving of the dishes, the later the cutlery is used, the closer it is to the plates. A soup spoon and a fork for snacks are laid out along the edges, a teaspoon and a fork for the main course are placed closer to the plates. If necessary, devices for fish or seafood are placed between them. To the right, with a blade to the plates, knives are placed, in the sequence of their use. Above the plates, parallel to the edge of the table, they lay out devices for dessert, they will be needed last and will not interfere with the feast.
To the right, above the plates, all the necessary glassware for drinks is displayed. The first place is a glass for water, and then the rest of the glass or crystal wine glasses and glasses.

All unnecessary or used utensils during the meal are removed from the table so as not to clutter up the free space.
The sequence of the correct arrangement of devices is presented in the table setting presentation:

Napkins - practical and beautiful

A special art is the use of napkins for table setting. In addition to practical application, napkins are an aesthetic decoration of the festive serving.

Usually paper and fabric napkins are used, they are selected, harmoniously combining in color with a tablecloth or dishes. Paper ones are used in the process of eating for hands and mouth, and fabric ones are laid out on their knees to protect clothes from getting food on them.
Napkins are placed in special holders, on a plate or in a glass. To make napkins become a holiday decoration, a large number of ways to fold and decorate them have been invented. From them you can make various figures: flowers, candles, peacocks, Christmas trees and many others, amazingly transforming the festive table and corresponding to the theme of the celebration.
A few simple ways to gradually fold napkins:

All table setting rules are based on the convenience and practicality of using appliances. By adhering to the basic criteria, you can create a cozy atmosphere for guests. In the video, the master of serving the festive table talks in detail about the basic rules:

And whether you are preparing a gala evening with several courses or laying a dinner for family members, you need to take into account the basic rules of serving tables for all kinds of feasts.

WESTWING not only loves beautiful dishes and stylish table decor, but will also be happy to tell you how to present them correctly in order to comply with all the rules and at the same time pleasantly surprise your guests. Simple guidelines will help you quickly understand the basic requirements of serving and inspire you to creative table decoration.

Basic table setting rules

Many people think that table setting rules are limited to the correct arrangement of cutlery and utensils, but in fact they also include general recommendations on the appearance of the table and chairs, and even the order in which dishes are served.

General table setting rules that will help you give the table a solemn look:

  • Table setting starts from chair arrangements for every guest. The distance between the chairs is 50-80 cm, each guest should be given equal space at the table.
  • The table should not look overloaded. It should contain only those plates, cutlery and glasses that are suitable for a particular serving of dishes.
  • Serving is determined based on the dishes planned for serving, the number of guests, the time of day and the reason for the feast. So, wedding table setting for a large number of guests will be different from a dinner in a country house in a narrow circle of friends.

Now let's look at all the serving steps in more detail.

Table setting rules: tablecloth

Table setting begins with a tablecloth. The classic option is white tablecloth on a table made of dense quality material, such as satin. Other tablecloth colors are allowed if they match your decorating idea and resonate with the tableware or decoration, but the main recommendation is that the tablecloth be light: beige-pink, cream, pale blue and other pleasant neutral colors.

The main rule of table setting: the tablecloth must be washed, clean and properly ironed. It serves as a backdrop for your stylish serving and dishes, so it should not distract attention. If the tablecloth is too thin or slips on the table, you can put a thin flannel fabric under it. It will also muffle the sound of cutlery and glasses on the table. Plastic and oilcloth tablecloths are not recommended for festive serving.

Tablecloth size it is calculated on the basis that its ends should evenly hang down by 25-30 cm, but not lower than the seat, and the corners should cover the legs.

Table setting rules: plates

Plates are placed on a neatly spread tablecloth. Please note that all dishes must be from the same set. In the center of each place is a lower plate, which serves as a stand for a plate with snacks and hot dishes and serves primarily decorative purposes. It is located at a distance of 2 cm from the edge of the table.

Placed on top of it snack or soup plate, depending on which dish you serve first. To the left of the snack plate, diagonally placed is a small plate for bread and butter (it is also called a patty plate).

Plates are replaced at each meal change so that guests do not have to eat from dirty and inappropriate plates. Any feast provides for at least one change of plates, and sometimes three or four.

Table setting rules: cutlery

Most often, it is the correct arrangement of cutlery that causes the most questions when serving, although simple rules apply here.

  1. Knives are always placed on the right side with the blade towards the plate, forks are always placed on the left side with the tip up.
  2. If the menu provides for soup, then the soup spoon is placed next to the knife with the spout up.
  3. butter knife put directly on a pie plate.
  4. Knives and forks depend on the type of food served. Allocate a snack pair of forks and knives, dessert, as well as a knife for fish and meat.
  5. The knife and fork for snacks are placed at the edges, since the feast usually begins with snacks. Thus, those devices that will be used first are placed further from the plate. When changing dishes, the cutlery is removed along with the plates.
  6. Next comes the time for cutlery for the second course. The knives differ depending on whether fish or meat is served, and both types of knives can often be found. fish knife has a rounded edge.
  7. Dessert set: a leg, a fork and a spoon are placed immediately behind the plate parallel to the edge of the table. The dessert knife and spoon are placed with the handle to the right, and the fork with the handle to the left.

Glasses and table setting

As you know, for each type of drink there is a glass. Your task is to correctly place them on the festive table. Glasses are usually placed to the right of the plates in one line at an angle of 45 degrees to the edge of the table.

Since each type of drink is also served at a specific meal time (aperitif, main drink, dessert drink, digestif), glasses are put away with plates and cutlery. The only type of glass that is always left on the table is water glass. The glasses must be in the order in which the drinks are served, with the furthest glass used first.

The complete set for table setting includes the following glasses:

  • water glass
  • Champagne glass
  • White wine glass
  • Red wine glass
  • Brandy glass
  • Glass for vodka
  • liquor glass

Each of these glasses has its own unique characteristics that allow it to fully reveal the taste and smell of a particular drink. Therefore, use the appropriate glasses for all drinks served!

How to serve a festive table: napkins

The same high requirements are put forward for napkins as for tablecloths. They should be perfectly clean, ironed, preferably white or cream and pleasant to the touch. It is recommended to choose napkins made from natural materials as they come into contact with the delicate skin of the face and may cause allergies or irritation.

Traditionally, a folded napkin is placed to the left of the plate or directly on the snack plate. Make sure that the napkin is neatly folded, for this you can use special napkin rings, which will give the table a formal and solemn look.

Knowing the recommendations for table setting, you can easily apply them in any situation, creatively adapt them to your holidays and decorate the table with flowers, candles and fruits at your discretion, without violating the basic rules.

Table setting with decorations

The main decoration of any event are, of course, flowers. Listening to the rules of table setting is worth decorating both on holidays and in everyday life. To make flowers pleasing to the eye, follow some simple recommendations:

  1. Make sure none of the guests are allergic to the flowers you choose to serve.
  2. Avoid serving plants with a strong scent. Mixed with the aroma of dishes, it can significantly spoil the appetite.
  3. Place the vase so that the fallen petals do not fall into the food.
  4. For the table, choose vases that will not interfere with the communication of guests. These can be low fixtures for small compositions or vases on a thin high leg.

If you follow the rules holiday table setting, then special attention should be paid to the choice of textiles. In addition to rectangular tablecloths and napkins, table linen includes buffet skirts, naperons, chair covers and round tablecloths. When choosing textiles, you need to rely on the occasion for which the event is organized, the place and format of its holding. One of the main criteria is also the combination of textiles and dishes.

How to set the table for breakfast

For breakfast, bread is cut and served in a wicker basket or a special plate with a napkin. Oil is served in a butter dish. Sausage and cheese are cut into thin slices. Jam and jam are served in a jam socket. On the table I serve a plate for breakfast, a glass for juice and a mug for tea or coffee.

Table setting for lunch and dinner

For lunch and dinner use canteens, snack bars and patty plates, to the left of the plate a table fork, to the right - a table knife. Wine glasses and glasses are placed near the knife on top. Also, do not forget about the napkin holder with napkins.

Tea table setting

The tea table is covered with a bright tablecloth and a tea or coffee set is beautifully arranged. To the right, obliquely from the dessert plate, put a cup and saucer. To the right of the plate put a spoon and a fork for desserts. The slot is decorated with flowers in a vase. Coffee and tea are served when everyone is seated at the table. They serve cakes, pastries or pies, sweets and other desserts.

Etiquette at the table: what is unacceptable

  • Do not use the tissue as a handkerchief or towel.
  • It is not customary to wipe dishes or cutlery with a napkin, it is better to ask for clean ones.
  • After eating, you do not need to try to give the used napkin its original appearance and fold it. You just need to put it next to the plate.
  • Napkins do not need to be laid behind the collar, but put on your knees in an expanded form.

You can visually familiarize yourself with the rules from the photos that are presented on the website of the WESTWING shopping club. Here you can also pick up beautiful high-quality textiles and exclusive tableware for a feast. If you use WESTWING's advice, your guests will be pleasantly surprised.
