  • It is best to use young nettles. It is low, bright green in color and with small leaves. But if there is none, then an “elderly plant” with large dark leaves will do. When cooked, they look the same.
  • Collect nettles with household gloves. By the way, latex does not really save you from nettle poison. It is better to use cloth gloves with rubber patches. Without removing gloves, rinse the nettle under running water, holding it by the roots. Then cut off (or tear off) unnecessary parts and immerse the plant in boiling water. She will stop stinging and she can be safely picked up, cleaned and cut.

  • Choose whole eggs. Homemade eggs with a bright rich yolk will look more beautiful. Use the ones that have been in your fridge for a couple of days. They will clean up better after cooking. If you have the freshest eggs, no worries. Put them to boil in cold water with a pinch of salt and 1 tbsp. l. vinegar. Salt will ensure the backlog of the shell from the boiled egg, and it will be cleaned without defects. The vinegar will prevent the eggs from leaking into the boiling water from accidental cracks.
  • Some housewives pour raw beaten eggs into the boiling soup. It will not spoil the taste, but the appearance of the dish will suffer. It is better to boil and chop the eggs.
  • Lemon juice plays a dual role in soup. Firstly, we are used to the fact that green soup should be sour. And secondly, the acidic environment does not allow to change the color of the products so much. In our case, nettles. If you are for a natural product, then squeeze fresh juice from a lemon.
