The kids are making noise, trying to bring their own mite. And here it is, the long-awaited moment - friends are seated around an impromptu table, ready to taste the fruits of their efforts. Appetite by that time will play out serious, that's for sure!

Pork, lamb, veal, chicken, turkey, fish are suitable for its preparation. Cut and marinate the meat in advance. It is better to do this the day before, then it will marinate enough.

Barbecue should be grilled over coals. Do not think that the main work was done by the one who marinated the meat. Half the success depends on the barbecue. Therefore, you should not let the process take its course - you need to monitor the fire, preventing the flame from flaring up and spoiling the meat.

Hot: ear, kulesh, porridge

Are there fishermen in the company? Great! Doubly great if they manage to catch something. Fresh fish will make a wonderful ear. You can play it safe by taking the head of a silver carp or a piece of pilengas fillet from home. Different types of fish are well combined in the ear, and the more there are, the more fragrant and rich the dish will turn out.

In addition to fish, millet or pearl barley, roots, potatoes, carrots, herbs, and pickles are added to the ear. Here it is quite possible to experiment.

And there is also an excellent recipe, as a result of which the fish turns out to be similar to smoked. To do this, branches and umbrellas of young dill are laid on the grate, and on them - a whole or cut fish along the ridge. The greenery does not light up, but smolders, emitting abundant smoke. As a result, fish meat is saturated with it, smoked. It takes about an hour to prepare this dish.

sausages

And what to do with the kids? What simple picnic dishes can the younger generation cook? After all, children also want to feel like field chefs! Yes, and sometimes it is simply unbearable to wait for a fragrant fish soup or tempting kebabs. We will offer young tourists to master the preparation of sausages. Several cuts are made on the potatoes, slices of bacon or bacon, onion slices are laid in them, sprinkled with seasonings. Stuffed tubers are wrapped in foil and baked in this form. The recipe is good because the dish is prepared quite quickly, and the result exceeds all expectations!

Picnic drinks

First, let's remember what we agreed not to do during the picnic - do not take perishable food with you. Therefore, kefir, fermented baked milk and even delicious homemade milk were left at home. Instead, we will serve tomato and apple juice, kvass, bottled water to the table. Cool green tea or brewed rose hips are very good at a picnic. And if it is planned that the holiday will drag on until dark, we will stock up on the ingredients for making a drink at the stake. After all, by the evening it will certainly be cold. Who would refuse fragrant herbal tea? We need mint, lemon balm, thyme, raspberry and blackcurrant leaves. You can add dried berries, dried fruits. Thinking about where to celebrate a birthday, many stop at a non-standard option - going out into the countryside. The place of celebration will definitely affect not only how the celebration will take place, but also on the menu. Obviously, layered salads and a three-story cake won't work. What then to cook?

Snack in anticipation

Preparing for a holiday outside the city, many often forget that they should not forget about breakfast or a snack. As a rule, people leave for a picnic in the morning, when some have not had breakfast yet, and the road is sometimes long. Therefore, those who are waiting for a barbecue or other hot food must be fed.

For example, you can prepare in advance and take it with you, but they will look better if you grab only the ingredients, and assemble the entire “construction” on the spot. What will be included in such an appetizer?

  1. A slice of rye bread, a thin layer of mustard or horseradish, ham or boiled pork, fresh cucumber and red onion rings.
  2. A piece of ciabatta, a lettuce leaf, a layer of canned tuna, a circle of tomato. Such a sandwich can be supplemented with boiled eggs.
  3. Bruschetta, or rather its lightweight, one might say, camping version: on a slice of bread, fried on the grill or in advance at home in a pan, spread a mixture of tomatoes, garlic and basil. Salt and pepper is better than a ready-made sandwich. For 4 slices of bread, take 2-3 tomatoes, 3 cloves of garlic and 12-15 basil leaves.

As a snack, you can eat something else. For example, bring with you cheese and cold cuts, pickles, canned olives and black olives, etc. Sausages on the fire are also suitable: they do not require hot coals, so they will cook much faster than barbecue.

Meat

It's hard to imagine a trip to nature without a barbecue in the summer. It is prepared from chicken, lamb, beef and pork, marinated at home, and once at a picnic, they only string it on skewers and watch it brown evenly. Almost every man (namely, representatives of the stronger sex are considered the best barbecue) has his own way of cooking pieces of meat. But for those who decide to deviate from tradition and do something different, we can advise the recipe for fragrant kebab on the grill.

Lula kebab is prepared from different meats, but for the most juicy option, it is recommended to stop at minced pork or mixed with beef in a 1: 1 ratio. It will require 2 kg.

  1. In minced meat, add chopped onion (at least 4 heads), as well as 5-7 cloves of garlic, salt and pepper, cut into small cubes. Greens take any quantity - to taste. It is finely chopped and also put in minced meat. That's all the ingredients, no eggs, bread, etc. is needed. Perhaps this is one of the easiest and fastest dishes for a country picnic.
  2. Now you need to carefully beat off the resulting mixture. It is to beat off, not to knead. To do this, it is picked up and thrown into a bowl or onto a cutting board. This is done to rid the stuffing of excess moisture. This difficult task will take about 10 minutes.
  3. Already at the heated brazier (the heat should be quite strong), a kebab is formed. To do this, the minced meat is firmly crushed on a skewer, forming a sausage no more than 4 cm thick.

When an appetizing crust appears on the meat, they begin to turn the skewer often, maintaining the heat of the coals. So you need to do 12-14 minutes, and then immediately serve the dish to the table. Fresh vegetables, herbs and pita bread will be ideally combined with it. If you need a sauce, it is better to use tomato with garlic and herbs.

For meat dishes

Eating meat alone, even the most delicious, will not work. Yes, and the occasion implies some variety in the menu. What to supplement it with?

"Kaleidoscope"

A salad with such an unusual name is perfect for a meal outdoors. It does not contain mayonnaise, so it will endure the heat with firmness. You can mix the ingredients in advance and bring a ready-made dish in a container to the picnic. What is included in the salad:

  • a can of canned red beans in their own juice;
  • 1/3 can canned sweet corn;
  • 2 dense tomatoes;
  • bell pepper;
  • 1 head of onion;
  • a few green onion feathers;
  • cilantro, dill, etc. - to taste;
  • juice of 1 lime, 2 tsp. wine vinegar, 125 ml olive oil, salt, pepper, 2 tsp. dry mustard - for dressing.

Peppers and tomatoes are cut into cubes, onions and herbs are chopped. In a bowl, mix the chopped vegetables with beans and corn, pour over the dressing. The dressing should be brought in a separate bottle and pour over the salad just before serving. Gourmets can also add 1 cubed avocado to the dish. This dish is ideal with meat and corn nachos.

Grilled stuffed peppers

Vegetables are considered an ideal side dish, so you should not deviate from tradition and cook them on the grill. By adding toppings to them, you can get a truly festive dish.

  1. Cut 4 identical bell peppers (for 8 people) in half lengthwise, rinse well, remove seeds, dry and take with you to nature.
  2. The filling is prepared at home, and then brought in a separate container to a picnic, where peppers are filled with it: grate 200 g of parmesan, mix with garlic (2-3 cloves) passed through a press, a chopped bunch of basil and 100 ml of olive oil.
  3. Cut 1 small onion into half rings and fry in oil until soft. Mix the onion, cheese-garlic mixture with canned corn or beans (1 can), after draining the liquid.
  4. First, peppers are laid on the grill with the cut down for 5 minutes, then they are turned over, filled with the prepared salted mixture, sprinkled with grated cheese (50-60 g) and left for another 5-7 minutes.

A more satisfying option is to add a glass of boiled rice to the filling. Ready peppers are sprinkled with herbs or poured with a mixture of olive oil, salt and chopped herbs.

Winter menu

Many of those who were born in winter believe that they will never be able to celebrate their birthday in nature. However, this is not so, because if you get away from stereotypes, you can try. The table will be somewhat different than the summer one, but still it will be to your taste.

There are many recipes for festive dishes, almost any of them can be adapted for an off-site meal. Therefore, you can choose your favorite hot and snacks. Perhaps only complex decorations made of creams and sauces will fail, but this is not so important at a picnic.

When compiling a menu for a picnic, consider the basic requirements for eating in nature. What should she be? First of all, hearty - in the air all the time you want to refresh yourself. And also convenient for transportation and so that you can easily eat it, preferably without the use of additional dishes.

Simple table for relaxing in the country

If you have gathered with friends for a summer cottage or just for a picnic in nature, the question immediately arises of what to take with you. After all, in the air and away from home, you want to eat almost as soon as you arrived! Especially for men))

An example of a menu for a picnic in the country or in nature

We traveled by car, so we did not care about the weight of bags and other luggage. If you are traveling by public transport and walking to a summer house or a place in the forest, then measure your strength.

What is important to remember when gathering for a picnic

  • Try to take with you on a picnic only those foods that are well stored in warm weather (or put perishable foods in a cooler bag);
  • Pack all foods and dishes well, choosing non-fragile foods and containers. Use containers with lids, foil, newspapers, towels (to wrap fragile bottles, for example) so that nothing leaks or gets crushed;
  • Choose only fresh foods to avoid poisoning;
  • Wash your hands before eating or use wet wipes. It is better to wash fruits (vegetables, fruits) and herbs in advance at home and dry them, and then pack them so that you do not have to spend clean water that is scarce in nature;
  • Take a large supply of clean water with you. This is necessary for drinking, and for cleanliness, and for washing wounds and broken knees, if suddenly someone needs it;
  • Have a first aid kit with bandages or a clean white cloth, disinfectant (at least brilliant green), painkillers, indigestion medicine, activated charcoal, or other absorbent. The first aid kit should also contain medicines for your chronic diseases. Perhaps, and spray or coils from mosquitoes and other insects.
  • Dress for the season, bringing something warmer and some protection from the rain. Shoes should be comfortable, with thick soles, in warm weather be sure to take hats and sunglasses with you.

The rest, I think, you remember yourself.

We assume that you have a barbecue, grate or just a grate and the ability to dig a rectangular hole and make a fire for barbecue. If necessary, bring firewood and other accessories for a fire or barbecue (matches, for example).

And you can also fry a barbecue from a pork neck marinated in wine, pomegranate sauce, table vinegar, lemon juice or kiwi. As you like.

What to buy - a list of products

If you are going to the country, then some of the vegetables, herbs and berries and fruits can be found in your garden.

For 6 people and 2 meals (lunch and dinner) so that you can eat very much (we still have food), you can take (not very expensive, but a satisfying set):

  • 1 large chicken - marinated at home or just raw (or 6 chicken legs, 12 thighs or 1.5-2 kg chicken breast fillet);
  • Sausages or sausages for frying - 6 pieces (or a package of 10-12 sausages);
  • Smoked sausage (stick) and a piece of medium-sized cheese (you can take half a loaf of sausage cheese);
  • Mayonnaise - 1 pack;
  • Fresh vegetables (cucumbers, tomatoes - 6 medium each; 0.5 kg of radish). You can also take sweet peppers, onions, garlic, if they are not in the garden;
  • Raw potatoes, washed - 6 large tubers or 12 medium ones;
  • Zucchini - 2 pieces;
  • Fresh greens (if you don’t have your own in the garden) - dill, parsley, green onions, cilantro;
  • Bread - 1 black loaf, 1 loaf (or 2-3 Uzbek flatbread or thin Armenian lavash);
  • Tea (small package in bags) and sugar (if there is a kettle);
  • Salt;
  • Napkins (regular and wet, if there is no soap and water);
  • Toilet paper - 1 roll;
  • Tablecloth / oilcloth or paper (if you eat, you will not be at a clean table);
  • Drinking water - 5-10 liters (more is better, you will want to drink a lot, especially for a hearty meal);
  • Water for washing hands - 5 liters (preferably more) + soap;
  • Disposable tableware (plates 6-10 pieces, 6 cups and forks each);
  • Matches;
  • Drinks at your discretion;

I also suggest taking dishes or semi-finished products prepared in advance at home:

  • quick salting (I made slices), they are very well eaten, and they do not end in cutting for a long time. I salted 1.5 kg of cucumbers - rinse them, cut in half, cut the halves into 4 slices. Spread in a container, sprinkling with salt (as you would salt a regular salad). Add a pinch of dried basil or chopped dill, and/or chopped garlic (1-3 cloves). If you salt right in the country, you can first put a couple of cherry, currant, horseradish leaves (at the bottom of the container). And then the cucumbers. When everything is laid out, it is necessary to tightly close the container with a lid and shake it vigorously for about 3 minutes. And leave it to soak in a warm place until lunch. I did at night (can be a day). If the upper slices suddenly do not have time to salt, it does not matter - just salt them on top and shake.
  • Apple pie(you can make apples with the addition of other fruits). I did it, very satisfying, a lot of servings (12 large, you can cut it smaller), didn’t even finish it (ate too much).
  • Chicken can pickle in advance (see -). If you haven’t marinated, then just rub the pieces of meat with salt (and spices, if you want) and leave them to salt for 20-30 minutes. Either you can lubricate the chicken with ordinary mayonnaise (and do not add a little salt, the mayonnaise is salty), or with a ready-made marinade, you can, Or pour something fruity and sour on the chicken (pomegranate juice or Narsharab sauce, lemon juice).
  • Boiled potatoes(optional) - 2 pieces per person, fried chicken will be tastier with it;
  • boiled eggs- 1-2 per person.

Apple pie with bananas, it is convenient to lay and transport slices of a round pie with cloves one by one.

What to do for a picnic lunch

Approximately 1.5-2 hours before dinner, you need to do meat - chop wood, make a fire, prepare a grill for meat. And when the firewood burns out, fry the chicken on the grill.

You can immediately put on the table:

  • all chopped vegetables (all the same, they won’t eat everything, some will remain for the evening),
  • bread,
  • salted cucumbers,
  • sausage, cheese (it is convenient to cut them in advance and take them immediately in a container),
  • grilled chicken,
  • boiled potatoes (if any)
  • boiled eggs,
  • the drinks,
  • pie.

In general, this is enough to eat a very hearty meal for all six adults. Each will get 1 piece of grilled meat (there will be 6 large pieces in the chicken: 2 legs + 2 wings with part of the breast + 2 large parts of the breast, and the legs can be cut into a thigh and a leg. For those who are not enough, you can take 2 chicken or a package of legs additionally). In addition, there will be vegetables, boiled eggs, salted cucumbers, cheese with sausage on the table (you can make sandwiches). And then there's the pie. It is very satisfying, you will fill up, and still remain.

What to serve for dinner

It is necessary to maintain a fire in the grill and 2 hours before the start of dinner, put sausages or sausages in turn to fry, and then zucchini (grated with salt and cut into slices). When everything is ready, you can bake potatoes in the ashes (we wrapped each potato in foil, which was left over from the packaging of the pie). I caught the readiness of potatoes by the smell of baked potatoes that appeared, pierced the foil with a fork, it went in easily, the potatoes were crumbly and very tasty.

Baked potatoes can be eaten simply with salt, or with mayonnaise. It is not necessary to put it in hot ash; you can fry young washed or peeled potatoes and halves on the grill ().

As a result, there will be fried sausages or sausages on the meat table, along with baked potatoes and grilled zucchini, leftover vegetables, sausages with cheese, bread and a pie. Also very satisfying.

In nature, you can still cook a hearty and tasty dish of army military field cuisine - (or with brisket).

Picnic salads

Much depends on what you have at hand and in what conditions the lunch will take place. If it’s just in a forest clearing or in a country house where there is no running water, then making vegetable salads seasoned with oil is probably not very convenient, you need dishes, oil drips, a lot of trouble. It's easier to take a slice of chopped vegetables or a whole radish from the table and eat it.

And if you have the conditions for slicing, enough dishes, it is possible to wash everything after, then you can cook simple vegetable salads with vegetable oil or mayonnaise from vegetables and herbs brought with you or found in the beds. But, it is best to pickle vegetables (prepare lightly salted ones from cucumbers, tomatoes, sweet and hot peppers), then they will definitely be well preserved and will go well with grilled meat.

Also note that if you dress the salad with mayonnaise, then you must eat it quickly, otherwise it may deteriorate.

And you can cut a salad from everything that you took with you (sausage, sweet pepper, cheese and other tasty ones) and you get such a salad (as in), which only needs bread.

It is convenient to pickle slices of cucumbers with dry salting at night, and eat them in the country or on a picnic during the day!

picnic pizza

Recently, I baked 2 pizzas at once in order to feed a group of hungry vacationers in nature. It's comfortable. Make the dough, roll the base into 2 pizzas, fill with the filling and bake. The dough takes 40-60 minutes (or you can buy ready-made, 300-400 grams or puff - a package of 400-500 g), 1 pizza is baked for 15-20 minutes. All you have to do is cut and wrap. I cut it in portions, wrapped each piece in foil so that it could be unfolded from above, opening it as it was eaten (so as not to get dirty). Each of the company was given a bag containing 2 slices of pizza and 2 napkins.
