How does a microwave oven work?

Microwaves "bomb" the water molecules in food, causing them to spin at millions of times per second, creating molecular friction that heats the food. This friction causes significant damage to food molecules, tearing or deforming them.

Microwaves are dangerous for children!

Some of the amino acids of L-proline, which are part of mother's milk, as well as in milk formulas for children, are converted under the influence of microwaves into d-isomers, which are considered neurotoxic (deform the nervous system) and nephrotoxic (poisonous to the kidneys). It's a shame that many babies are fed on artificial milk substitutes (baby food), which are made even more toxic by microwaves.

Scientific data and facts

A comparative study on Microwave Cooking published in 1992 in the United States states:
“From a medical point of view, it is believed that the introduction of microwave-exposed molecules into the human body is much more likely to cause harm than good. Microwaved food contains microwave energy in molecules that are not present in conventionally prepared foods.

A short-term study showed that people who consumed microwaved milk and vegetables had changes in blood composition, decreased hemoglobin and increased cholesterol, while people who ate the same food, but prepared in the traditional way, did not change the state of the body.

Swiss Clinical Research

Dr. Hans Ulrich Hertel participated in a similar study and worked for a large Swiss company for many years. A few years ago, she was fired from her position for disclosing the results of these experiments. In 1991, she and a professor at the University of Lausanne published a study showing that food cooked in a microwave oven could pose a health risk compared to food cooked in traditional ways. The article was also featured in Franz Weber #19, where it was said that eating food cooked in microwave ovens has a malignant effect on the blood.

At intervals of two to five days, volunteers received one of the following food options on an empty stomach:
(1) raw milk;
(2) the same milk heated in the traditional way;
(3) pasteurized milk;
(4) the same milk heated in a microwave oven;
(5) fresh vegetables;
(6) the same vegetables cooked traditionally;
(7) frozen vegetables thawed in the traditional way; and (the same vegetables cooked in the microwave.

Blood samples were taken from volunteers immediately before each meal. Then a blood test was performed at certain intervals after the intake of milk and plant products.

Significant changes were found in blood at meal intervals exposed to microwaves. These changes included a reduction in hemoglobin and a change in the composition of cholesterol, especially the ratio of HDL (good cholesterol) to LDL (bad cholesterol). The number of Lymphocytes (white blood cells) increased. All these indicators indicate degeneration. In addition, part of the microwave energy remains in food, using which a person is exposed to microwave radiation.

Radiation leads to the destruction and deformation of food molecules. The microwave creates new compounds that do not exist in nature, called radiolytics. Radiolytic compounds create molecular rot as a direct consequence of radiation.

Microwave manufacturers claim that microwaved food does not have much of a difference in composition compared to conventionally processed food. But not a single public university in the US has conducted a single study on the effects of modified food in the microwave on the human body. But there is a lot of research on what happens if the microwave oven door is not closed. Isn't this a little strange? Common sense dictates that attention should be paid to what happens to microwaved food. One can only guess how molecular rot from the microwave will affect our health in the future!

Why don't ovens like gilded dishes?

If you have ever used a microwave or just looked into its bowels, you may have noticed that the device has a metal case and a mesh is installed in the door. And this is in any microwave oven without exception!

The reason for such a constructive monotony is simple - the waves should not leave the interior of the furnace, and metal is ideal for this purpose, since it does not transmit radiation.

That is why metal utensils are not used in the microwave, it not only prevents the products from heating up, but also poses a threat to the device itself. The "meeting" of an iron bowl with microwaves causes a spectacular and at the same time dangerous phenomenon of sparking or even an electric arc, which can cause the stove to become unusable.

Therefore, nickel-plated, enameled, aluminum and steel pots, plates and cups cannot be used in the microwave! Add to the list of prohibited items also dishes lavishly decorated with a variety of decorative elements containing metal, such as gilding.

However, there are exceptions to this rule (usually they are specified in the instructions for the device). In almost any oven, it is allowed to use foil, it covers those parts of the products that should not be heated ahead of time, most often these are the protruding wings or legs of the stove. Foil is used when cooking or defrosting.

Another exception is special utensils designed by the stove manufacturer, such as the Aqua Cook Samsung Steaming Kit, which has a metal cap to protect food from waves. Dishes of this type can be used fearlessly, it will not cause malfunctions in the operation of the device.

We should not forget that microwave ovens can be combined, that is, equipped with heaters (grill heating elements, ring elements). If the oven is operated without turning on the microwave, then it can use any utensils that are suitable in size: small baking sheets and braziers, cake and muffin tins, frying pans.

Wooden bowls are better - on the shelf

Wooden dishes are not used so widely in our homes - we love Khokhloma, straw products and often buy them for simple purposes: storing bulk products, sweets, bread, but mainly for decoration.

It is unlikely that anyone will dare to cook in it: it’s a pity, but you can still think of warming up something like buns on a wooden plate or board.

Some manufacturers generally do not recommend the use of wooden utensils in the microwave because of the danger of overheating and charring. Or use it only for a short time, for example, for reheating or quick preparation, for example, hot sandwiches, in which case it is better to give preference to foods low in fat and sugar.

Wood is a living material with a heterogeneous structure, the pores of which may contain moisture; when heated, this can lead to deformation and even damage to dishes.

Paper is not dishes

Microwave manufacturers do not prohibit the use of disposable forms and plates made of paper or cardboard, although they are not reliable for long-term cooking, especially if the future dish contains a lot of moisture and fat. When heated for more than a few minutes, packages with a wax or plastic coating will “leak”: the protective layer will melt and get on the food.

To absorb juice and protect against weathering, you can use paper kitchen towels, baking sheets, as well as for the oven, can be lined with tracing paper, for baking small and medium-sized cupcakes, you can take ready-made paper molds in the form of rosettes with corrugated walls.

To make sure that the dishes are suitable for microwave cooking, a simple test is carried out (it is always included in the instructions for the appliance).

A glass filled with water is placed in the oven, and the object under study is placed in the chamber at the same time. The device is turned on at full power for 1 minute.

If, after the specified time, the water in the glass is heated, and not the dish to be tested, everything is in order, the test was passed successfully, the item can be used in the furnace. But, if the water temperature has not changed, and the plate or cup has warmed up, it means that the material of the dish absorbs microwaves and it is dangerous to use such a product.

The instructions for my microwave recommend making the check easier. You need to put empty dishes in the oven and turn on the device for 30-60 seconds at maximum power, suitable dishes will remain cold (or you can touch them without fear), unsuitable ones will become hot, or even sparkle.

Temper yourself! And you won't burst!

As you can see, almost all the products familiar to us are excluded from the list of possible dishes: pots, pans, ladles. So what are we going to cook in?

In glass! This material perfectly transmits waves without reducing the effect of their impact, is easy to clean and is suitable not only for cooking, but also for serving.

Now there is a large selection of various glass and glass-ceramic products that are ideal for microwaves - these are small, medium and deep frying pans with two handles, with and without lids, saucepans of various sizes, baking sheets.

They are made of thick, heat-resistant, tempered glass (or a glass-ceramic composite) that can withstand rising temperatures without problems: heat-resistant cookware can be used from -40 to 1000 degrees!

Dishes made of glass and glass-ceramics can also be used under normal conditions - on the stove (except for induction), in the oven, and, of course, in a combined microwave oven with a grill or convection (where the heat reaches more than 220-250 degrees).

It must be remembered that glass does not like sudden changes in temperature, for example, when cold water is added to hot water, or heated dishes are placed on a wet towel.

In the microwave, you can cook in ordinary homemade glasses, plates, salad bowls. But it is better to avoid the use of fragile products with thin walls, as they can burst when heated.

Many housewives can boast of a small set of crystal dishes. This is a type of glass that is distinguished by a high content of lead oxide, which gives the crystal its wonderful decorative properties and allows it to be cut. But, the better the crystal, the less suitable it is for a microwave oven: it can absorb radiation, and its inhomogeneous walls can crack when heated.

Pots will work too

Loyalty to microwaves is also distinguished by a large family of dishes made of ceramics (red clay), porcelain (white clay), faience (clay with the addition of gypsum). It can be included in the list of allowed for use in microwave ovens, but with some reservations.

To begin with, it’s still worth doing a test: at present, various compounds are introduced into clay that improve the quality and appearance of dishes, but can change the properties of the material, reducing its ability to pass waves unhindered. It is undesirable to use products that have chips, cracks, as these defects can lead to splitting due to overheating of the moisture accumulated in them during washing.

In the oven, you can use the same ceramics that we use in the oven - dishes, pots, stewpans, terrines (rectangular containers with lids), tagines (forms with cone-shaped lids), provided that they fit in the chamber.

You can also cook and reheat in serving dishes, giving preference to simple and round products.

Such dishes, especially thick-walled ones, retain heat well and therefore, ready-made dishes do not cool down longer. Since the surface of the products may have many micropores, it is not worth moistening the containers before laying the products.

Silicone molds themselves ask for the oven

Silicone baking molds are almost always specialized - for muffins, rolls, cookies, casseroles. We can cook all these dishes in the microwave, and of course, use silicone molds for this. Silicone mats can also be used in the microwave oven, they are convenient for making sandwiches and pies.

Dishes are also special forces

Some microwave ovens are immediately equipped with special utensils for cooking. For example, Panasonic, LG, Whirlpool, Samsung, Teka, Sharp and Rolsen offer fry dishes.

They are made of glass-ceramic, but have a special coating that absorbs wave energy. The dish heats up very quickly, so that the food placed in it is browned, as in a frying pan. The inside of the dish may have a non-stick coating.

In the Moulinex, LG and Samsung model ranges, there are ovens that come with steamers - multi-tiered dishes with water bottoms, food sections and a lid.

LG ovens use a peculiar combination of these two devices - "Talented dish". This is a cookware set that includes a complete steamer, a frying disc and a crisping disc.

One of the Moulinex ovens is equipped with a bread maker, a mold necessary for making baked goods in the form of a brick. The device itself kneads, stands and bakes bread in automatic mode.

Disposable packages are not supplied with such inscriptions, therefore it is better to check once whether they can withstand heat, since plastic can be fusible and warp or lose shape from an increase in temperature.

But bags, for example, for baking (only without metal clamps), as well as a film, can be used for dishes that must retain their juiciness. For cooking, heating and defrosting, you can take heat-resistant plates, glasses, dishes and other utensils made of plastic approved for microwave.

Special dishes for the microwave are a variety of containers, they are also suitable for storing food, including at low temperatures in the refrigerator. Containers are equipped with lids with special valves for steam release.

Among this group there are specialized subjects. For example, a steamer is a set that includes a main water tank, one or more slatted or perforated inserts, and a cap.

You can also purchase a cap separately, with its help any plate will turn into a very convenient container for stewing, which, moreover, will better retain heat. Another example of plastic utensils is a variety of containers for cooking eggs. They also have a similar shape - oval.

An egg is broken into the container, salted, the necessary manipulations are done (for example, they are stirred, mayonnaise, milk, chopped greens, chopped vegetables or sausage are added), covered with a lid and sent to the oven. With such a device, you can get boiled eggs (with varying degrees of readiness - in a bag, soft-boiled, hard-boiled), cook omelettes.

To begin with, it is strictly forbidden to put any metal in the microwave, even dishes with metal coating. Paradoxically, if you think logically, then there is metal in the microwave oven from the very first day of use. Most often, the door of this technique is made of aluminum, but this is absolutely safe, since this aluminum lining is made so that the waves emitted by the microwave oven have something to be absorbed into. In addition, the upper part of the food that is inside during reheating or cooking is fried at the same time. So you can't do without an aluminum lining. But this is not the same as, for example, putting a cup with a metal spoon to warm up for a couple of minutes.

In addition to the door, the inside of the microwave oven has a metal finish, as microwaves must be restrained by something so that they remain inside the oven and cook food, and not get out and negatively affect the health of the person standing next to them. If you look at the microwave very closely, you can see very small holes on it that allow you to see if the cooking process is in progress, but these holes do not let radio waves through and keep human health in complete safety.

So, if, in theory, almost the entire microwave oven is made of metal, why can't you put additional metal objects or utensils with metal coating in it?

In order to find the answer to this question, you need to figure out how the microwave oven works. Everything is simple here: an electronic lamp is connected to a source of electricity and everything starts working. This special lamp spreads its rays directly onto the metal walls of the microwave oven, so the microwaves begin to move around the space until heat is generated, due to which food is cooked or heated. It is very important that the material of the dishes is not metallic, since in this case the microwaves will also be directed to it, the food will receive radiation, and the equipment may deteriorate.

If you take a chance and put a metal dish in the included microwave, then this dish will act as something like a conductor and will be charged with electrons. A large number of such electrons can create an electrical breakdown. In the best case, the microwave oven will simply fail, and in the worst case, such a breakdown can make a large hole in the oven wall, injure the owner of the electrical appliance, damage the wiring, or even become a source of fire. The tightness of the microwave oven may be broken, and then all the waves will "go free" and begin to irradiate the room, animals, people.

Note that even a ceramic dish with food, which is covered with aluminum foil on top, cannot be placed in the microwave; it is also forbidden to place a metal container. It would seem that all these are trifles, but these items can cause damage to the microwave oven, the same exposure or fire.

All the instructions that come with the microwave oven state that you must not put metal objects inside the oven.
