Preparation of the cellar and cabbage

Of course, a lot depends on the choice of variety. But it is also important to pay attention to the room where it is planned to lay the forks for storage. That is, in order to store cabbage in the cellar for a long time, you need to prepare an underground warehouse. And first of all, you need to create an optimal temperature regime. In the cellar, the indicators should not be lower than minus 1 degree, and not higher than plus 2 degrees Celsius.

You should also get rid of rodents in advance. And so that mold and pathogenic fungi and bacteria do not settle, the walls must be whitewashed. For this, a solution of quicklime is used. Storage methods

There are many ways to store cabbage in the cellar during the winter. Each of them has both advantages and disadvantages. Let's look at them so that you can choose the most best option for yourself.

Garter (video)

The easiest way. It lies in the fact that the cabbage is hung in the cellar by the stems. Of course, the roots must be thoroughly cleaned from the ground. For storage, a wooden lath is fixed in the ceiling, nails are stuffed into it. It is on them that heads of cabbage are hung with a rope. So cabbage is stored for a very long time, does not deteriorate.

If any surebet looks suspicious, it will immediately become noticeable. Cabbage in limbo is clearly visible, ventilated. Every head is available. True, a lot of vegetables cannot be placed in this way, and this is a minus. However, it all depends on the size of the cellar.

Wooden boxes

Another simple way to store cabbage in the cellar in winter is to place garden culture in wooden boxes. Much here depends on the preparation of the container and the quality of the heads of cabbage. Drawers must be clean and breathable. Space must be provided between the rails for product ventilation. The roots and stems of cabbage should be cut off. Damaged leaves should also be removed.

Under no circumstances should the drawers be closed. Yes, and you need to put them in one row, and only on stands. Best suited for this wooden blocks. That is, air must enter the container from the sides and bottom. The method is very simple, but in terms of efficiency it is inferior to others, since the forks, touching each other, after a while, nevertheless begin to rot.

Food film (video)

The storage method is very simple: heads of cabbage are cleaned of excess outer leaves, leaving 2-3 leaves, and wrapped in several layers with a film. At the same time, polyethylene must be pressed tightly against the vegetable so that there are no air pockets.

In this form, cabbage can be stored for a very long time, since there is no access to air and moisture to the forks. In addition, with the help of the film, high level product hygiene. And the heads of cabbage stacked on the shelves of the cellar look beautiful.

In paper wrapper (video)

Heads of cabbage are wrapped in paper several times and laid out in bags, which are then placed on the basement racks. Cabbage in this form is protected from moisture, light does not fall on it. Heads of cabbage do not touch each other.

In such a wrap, each plug is in an excellent heat-insulating environment. But due to the access of air, after a while, the forks can begin to rot. Therefore, when deciding what is better for storing film or paper, it is better to give preference to the first.

Please note that you cannot take newspapers to wrap cabbage. Otherwise, avoid getting into food harmful substances(in particular, lead), which are abundant in printing ink. It is better to use ordinary craft or baking paper, parchment.

In sand

To save all the nutrients and vitamins in cabbage, you can adopt another simple method - storage in the sand. To do this, heads of cabbage located in containers (boxes, barrels, bags) must be covered with clean, dry sand. You can make it even easier: spread the entire crop at the bottom of the cellar and sprinkle each fork with sand.

Of course, the method is not distinguished by purity, especially sterility. But cabbage in this way can successfully survive until mid-spring and even until June. Much depends on the variety and temperature regime basement.

  • If there is no cellar, several forks can be frozen in the freezer. Useful material persist, but the cabbage will lose its attractiveness. It is important to remember here that re-freezing will spoil the vegetable. To freeze each fork, you need to take a good look, make sure that some kind of caterpillar has not hidden in it. Then the heads are thoroughly washed in running water, dry with a cloth napkin and only then put in freezer. Cauliflower, Brussels sprouts, broccoli are well stored in the frozen state.

In the fridge

How to store cabbage in the refrigerator? For residents of large cities, a refrigerator is the only available place to store food. Most often, there is a basement for storing vegetables in houses of old construction; in new buildings, this possibility is not provided. A personal cellar or caisson is located somewhere outside the city, and it takes a long time to go there.

You can store fresh cabbage in the refrigerator:

  1. in kind. This means that prepared forks are simply placed in the vegetable compartment of the refrigerator or on its shelves. The disadvantage of this method is that cabbage quickly withers. Periodically, you will have to remove the top wilted leaves.
  2. Wrapped in cling film. The essence of storage is the same as in the previous case. However, this option is better, since the film protects the cabbage from wilting. To store cabbage in the refrigerator, you need to wrap the prepared heads in cling film and put in the refrigerator. So they last long enough.

In the film, the heads will last longer

Storage in the refrigerator of certain types of cabbage:

  • at home is possible only in the refrigerator. This environment is more favorable for her than others. It is better to wrap it in cling film and put it in the vegetable compartment of the refrigerator;
  • possibly in the refrigerator. However, she is not able to lie like this all winter. This type of cabbage quickly "gets stale", so the shelf life is fresh she has a minimum;

At temperatures below 0 degrees, the cabbage will freeze and lose taste qualities. In addition, the frozen area will immediately begin to rot. At temperatures above +5 degrees, the cabbage will begin to deteriorate due to the multiplication of microorganisms and decay.

rotten cabbage

frozen cabbage

If damage to cabbage is noticed at the very beginning, cabbage can be saved. Carefully remove the layer of leaves affected by rotting or cut Cabbage wrap in polyethylene film and store further. However, it is worth remembering that it will not last its full term, so use it first.

Shelf life

Cabbage at home is not stored for as long as in the cellar (basement, underground). The most reliable the way is to store cabbage in the refrigerator, wrapped in cling film, the most unreliable and careless - at room temperature.

The main points of storing cabbage in an apartment:

  • at room temperature, cabbage will last no more than a week;
  • on the balcony, subject to all conditions, cabbage can lie all winter and spring. Average term storage - 4 months;
  • in the refrigerator, without cling film, cabbage is stored for about a month, provided that the top sheets are removed when wilting;
  • in the refrigerator, cabbage wrapped in cling film is stored for up to 5 months;
  • kohlrabi is stored in the refrigerator for about a month;
  • Beijing cabbage, broccoli - a maximum of 15 days;
  • frozen cabbage of any kind is stored for up to 10 months;
  • dried, in compliance with the rules of storage - up to 12 months.

To keep cabbage in cling film longer, you need to check for condensate inside the film.

If water droplets form between the head and polyethylene, it is necessary to change the cling film. Unfold, discard the film, dry the cabbage and wrap it in a new one. Do this every time condensation appears.

Conditions of an apartment and a private house

How to store cabbage at home? A private house provides more opportunities for keeping cabbage fresh all winter than an apartment. It has two optimal places for this - a refrigerator and a balcony.

A private house most often has a basement in which cabbage is stored longer. at certain conditions. In the territory where private house, its owners make all kinds of outbuildings, garages, sheds, etc.

Such premises are built specifically for storing a rich harvest, including cabbage. Eventually, in a private house more places and opportunities for storing cabbage for the winter than in an apartment.

Thus, storing cabbage at home is quite possible. Sometimes this method is the only correct one. Yes, he does not give such good results the duration of storage of fresh cabbage, such as storing it in the underground (basement, cellar), but at home you can freeze or dry cabbage, put fresh heads of cabbage in the refrigerator or on the balcony.

So, in order to provide yourself with fresh cabbage for the whole winter, you need:

  1. Prepare the crop for storage: sort, clean, wash, dry.
  2. Decide on the method, storage location, and depending on it:
    • put cabbage wrapped in paper or cling film on the balcony;
    • put the cabbage in its natural form or wrapped in plastic wrap in the refrigerator;
    • freeze chopped or whole cabbage;
    • dry the cabbage in a vegetable dryer.

Be sure to consider the need for storing cabbage at home.:

  • division of cabbage into types,
  • determining the optimal storage method for a given type.

So you can save space in the house, and ensure the safety of the entire crop of cabbage for for the longest time.

But after 1-2 weeks, it dries, sprouts, or begins to rot, mucus and an unpleasant odor appear. And then the whole harvest, which cost you a lot of effort, goes down the drain.

Just think! Purchase good seeds. Sowing seeds. Seedling care. Dive seedlings and its constant watering. Long fight with weeds and with a white midge. Harvesting. And now, you have not yet had time to fill up with beautiful and juicy heads, as they began to rot in your cellar, on the balcony, or in the refrigerator. Sad, isn't it?

The fact that you only need to choose for storage late-ripening!!! varieties of cabbage, clear as daylight. Any late-ripening varieties that are grown in your area have good keeping quality.

Method number 1. Storing cabbage in cellophane - allows you to keep heads of cabbage fresh until the new harvest!

This method was shared with me by a neighbor in the country. He already despaired of keeping the cabbage fresh even until January. "How much different ways I tried it!, - he said - he dug out heads of cabbage with roots, hung them in the basement, buried them with roots in the ground in the cellar, sprinkled with chalk, wrapped them in newspaper .... Nothing worked, after a couple of weeks, or even faster, the cabbage began to germinate or dry ... ". Then he shared with me a method that I have been using for the 3rd year and which I will gladly share with you, dear readers.

  • Take a healthy head of cabbage without damaged leaves, without the slightest sign of spoilage.
  • Cut off the stalk, but leave a few green leaves.
  • Take the feed chalk and powder the head of cabbage with it carefully from all sides.
  • Now take a plastic bag - use only food bags, in no case should you take garbage bags - pour the same fodder chalk inside the bag.
  • Carefully place the processed head of cabbage in a chalked plastic bag.
  • Take a bowl of water, immerse the bag with the cabbage head in it, but so that the water does not get inside. Our goal: to extract all the air from the bag and create some kind of tightness.
  • Twist the end of the bag so that the cellophane fits snugly around the head, and tie it tightly.

Can be stored in a cellar or basement at a temperature of 1C to 10C.

You can also tightly wrap heads of cabbage cling film, but then the shelf life of cabbage is reduced.

Method number 2 How to save cabbage until July 1 using ordinary clay?

Cabbage is stored in the cellar under optimal temperature (1-4C) and humidity (80-90%) conditions.

  • Take the clay and dilute it with water to the consistency of sour cream of medium density.
  • Thoroughly coat the head of cabbage with clay so that the leaves do not remain visible. Carry out this procedure with all heads.
  • Hang the heads by the stalk head down until the clay hardens.
  • Then the cabbage can be folded into wooden boxes and take it to the basement or cellar for storage.

The dried layer of clay is very easy to remove if necessary. Cabbage stays fresh and juicy. It does not dry out, does not grow and retains all its useful substances.

Method number 3. How to save cabbage for the winter with a vacuum cleaner?

In fact, the cabbage is wrapped in the same plastic bag that we talked about in the 1st method. But the main thing here is tightness. So that there is no oxygen in the bag, in which all sorts of painful microorganisms develop, rot, and cabbage quickly deteriorates. By placing a head of cabbage in an airtight environment, you can keep it fresh for 12 months! What does the process itself look like?

  • Take a plastic bag, it is better that it is intended for food
  • Place a head of cabbage with a small stalk in a bag.
  • Remove the brush from the vacuum cleaner tube.
  • Point the tube into the bag of cabbage and turn on the vacuum cleaner.
  • When all the air has been pumped out, twist the ends of the cellophane around the stalk and tie tightly with a rope.

At the same time, leave the stump open.

Cabbage can be put in boxes and taken out to the cellar for storage. You can store it in the basement, in the refrigerator and even on the glazed balcony of your city apartment.

Method number 4. How to keep cabbage upside down until spring?

This method is also good because it allows you to save a lot free space on the shelves of your cellar or basement.

  • Dig up a rosette of cabbage with roots.
  • Tie a rope to the stalk.
  • Hang upside down from a beam or other structure attached to the ceiling.

    Method number 5. Storing cabbage outside

    This method is ideal when there is no cellar, because it allows you to store cabbage until spring right on the street! To do this, you must take the following steps:

    • Dig a hole in the ground to a depth of 50 cm.
    • Peel cabbage heads from damaged upper leaves, cut off the stalk, leaving only 2 cm at the head.
    • Lay the cabbage in the recess in the form of a house.
    • Top with healthy cabbage leaves, ordinary dry leaves, or dry, not rotten straw.
    • Sprinkle 10-20 cm with earth (The lower the temperature, the thicker the layer of earth is required).

    If winters in your region are characterized by heavy snowfalls, then you can not sprinkle cabbage with earth, but cover it with snow 90-100 cm thick.

    General rules for all methods of storing cabbage:

    • Only late varieties
    • Dry and healthy heads
    • Storage temperature from 0C to 6C
